Coconut Sugar (also called Coconut Palm Sugar) is natural sugar made from the coconut
palm tree sap, which is the sugary fluid that circulates the coconut tree. Coconut Sugar is
considered healthier than regular whole refined table sugar due to its low Glycemic Index
and low Fructose content.

The flower of the coconut palm is cut and the liquid sap is collected into containers. The
sap is then placed under very high heat until most of the water is evaporated and left with
sugar granules. It is then sieved with different mesh sizes and packed.
